Quince Cider
Queen of the Underground was a community collaboration with participants from around Whatcom County including Josh Prieb from Honey Do Acres in Bellingham, Katherine & Tim Fowler and Allen on Barr Road, and last but not least, Chestnut/Avocado Mike on Route 542! Thanks to them, this blend has depth with many heirloom apple and pear varieties, Arkansas Black, Kingston Black, Karmijn de Sonneville, Kings and Tsugaru apples! The centerpiece to this blend is estate Quince pressed through grape skins and fermented in new American Oak. The lots were mixed culture ferments and were blended and bottled by hand. This cider is truly unique, and is a great entry point for those interested in lightly oaked and tannic ciders. We think of this as a gateway cider for wine lovers who may not have delved into the depths of cider, or those who are looking for a complex albeit delicious experience! 6.9% ABV
