​This is a sparkling wine produced with a single fermentation of 2022 estate grown Pinot Gris.  These grapes were not sprayed during 2022 growing season, nor were they irrigated. The Pinot Gris was a late harvest pick, it was crushed and destemmed and macerated on its skins for a month before pressing.  The wine is a zero/zero wine--no yeast pitch or additives of any kind.  Fermentation finished in bottle, and it is unfined and unfiltered.  This one is alive--It is dry, bubbly, and oh so fruity! 11.8% ABV | 750ml
